How to make grilled eggplant recipe?

1. The ingredients quantity can be set as per your serving requirement under Change Serving. We recommend you set it prior to the start.

2. Slice the eggplant lengthwise.

3. In a colander, place the sliced eggplants and sprinkle them with salt. Set this aside for 30 minutes.

4. To prepare the salad, finely chop the cucumber & onion into small pieces.

5. Slice the cherry tomatoes into halves.

6. Finely chop the coriander leaves.

7. To prepare the salad, combine together cherry tomatoes, onion, salt, black pepper, cucumber, coriander leaves & lemon juice.

8. Mix them well. The salad is ready.

9. Brush the grill pan with olive oil.

10. Grill the eggplant on both sides for 5 - 8 minutes or until it turns golden brown.

11. Place the grilled eggplant on the serving plate with salad on top.
