How to make jam sandwich cookies recipe?

1. Set serving size

2. In large bowl, whisk together flour, cinnamon, nutmeg, baking powder, cloves and salt.

3. Using an electric mixer, beat butter and sugar on medium speed until light and fluffy, about 3 minutes.

4. Beat in egg.

5. Add the egg yolk & vanilla essence

6. Add the lemon zest

7. Reduce mixer speed to low and gradually add flour mixture, mixing just until incorporated.

8. Shape dough into 4 disks and roll each between 2 sheets parchment paper to 1/8- inch thick.

9. Chill until firm, 30 minutes, in refrigerator or 15 minutes in freezer.

10. Heat oven to 350°F / 175°C

11. Using floured 2- to 3-inch round fluted cutters, cut out cookies. Using smaller cutter, cut out centers of half of cookies. Reroll, chill and cut scraps.

12. Place on baking tray with parchment paper.

13. Bake, rotating sheets halfway through, until cookies are light golden brown around edges, 10 to 12 minutes.

14. Let cool on sheets 5 minutes before transferring to wire racks to cool completely.

15. Then form sandwiches with whole cookies, jam (1 1/2 teaspoon per sandwich) and cutouts.
